Pie Dough

- Make the Brown Butter: In a stainless steel pan over medium heat, cook the butter for 10-12 minutes until it turns medium brown and smells nutty. Scrape the butter into a shallow bowl lined with parchment paper and chill in the freezer until firm, about 1 hour.
- Prepare the Brown Butter for Dough: Once frozen, remove parchment paper, cut browned butter into cubes, and keep it chilled in the freezer until ready to use.
- Mix the Dough: In a mixing bowl, combine the flour and salt. Add the cubed browned butter and mix on low speed until the mixture resembles coarse sand with pea-sized pieces, about 3 minutes.
- Add Ice Water: Measure water and vinegar into a cup, add ice and stir to chill. With mixer on low, drizzle the ice water in by tablespoon until dough clumps and feels moist but not sticky, using about 10-15 tablespoons.
