  • 2 cups chopped butternut squash
  • 1 small shallot, peeled
  • 2 garlic cloves, peeled
  • 1 (15 oz) can white beans, drained and rinsed
  • 23 chipotles in adobo sauce
  • 1 tablespoon adobo sauce (optional for extra spice)
  • 2 flax eggs (2 tablespoons flaxseed meal + 6 tablespoons water, mixed and rested)
  • 1 cup cooked quinoa
  • 2/3 cup rolled oats
  • 1/3 cup flaxseed meal
  • 2 teaspoons ground cumin
  • Salt and freshly ground pepper, to taste

Instructions

  1. Prepare the base mixture: Blitz the chopped butternut squash, shallot, and garlic in a food processor until finely chopped and combined. Add the white beans, chipotles in adobo sauce, adobo sauce, flax eggs, cooked quinoa, rolled oats, flaxseed meal, cumin, salt, and pepper. Pulse the mixture until a dough-like consistency forms that holds together well.
  2. Form the patties: Divide the prepared dough into 8 equal portions. Shape each portion into a burger patty, about 3-4 inches in diameter. Place the patties on a plate, cover, and refrigerate for 30 minutes to help them firm up and hold their shape during cooking.
  3. Preheat the oven: When ready to cook, preheat your oven to 375ºF (190ºC). Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  4. Bake the burgers: Arrange the patties evenly spaced on the prepared baking sheet. Bake in the preheated oven for 40 minutes, flipping the burgers halfway through the cooking time to ensure even browning and crisping on both sides.
  5. Serve: Remove the baked burgers from the oven and serve immediately with your choice of toppings such as vegan queso, sliced tomato, fresh spinach or romaine, and tahini sauce. These burgers can also be frozen for later use.

  • For the flax eggs, combine 2 tablespoons of flaxseed meal with 6 tablespoons of water and let sit for 5-10 minutes until gelled.
  • The optional extra tablespoon of adobo sauce adds more spice; adjust according to your heat preference.
  • You can swap quinoa for cooked brown rice or couscous if preferred.
  • Make sure to flip the patties halfway through baking for even cooking and texture.
  • These burgers freeze well; freeze uncooked patties on a baking sheet, then transfer to a freezer bag.
