Brownie Batter

  • 3 oz (scant 1/3 cup) Vegetable Oil
  • 1 Tablespoon Pure Vanilla Extract
  • 1 Large Egg
  • 1 Large Egg Yolk
  • 1/8 Teaspoon Baking Powder
  • 1/2 Teaspoon Salt
  • 1 Tablespoon Cornstarch (Cornflour)
  • 60 grams (scant 1/2 cup) All-Purpose Flour
  • 8 Oreo Cookies, broken into pieces (for batter)
  • 3 Oreo Cookies, broken into pieces (for topping)
  • 4 oz Good Quality White Chocolate, chopped into chunks

Cream Cheese Layer

  • 6 oz (3/4 cup) Cream Cheese, softened to room temperature
  • 67 grams (1/3 cup) Granulated Sugar

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (180°C). Line an 8 or 9-inch square pan with foil or parchment paper, making sure to grease it generously. Leave some foil overhang for easy removal of the brownies later.
  2. Make Brownie Base: In a large pot over medium heat, combine the water, unsalted butter, granulated sugar, and Dutch cocoa powder. Cook for 2-3 minutes, stirring constantly until well combined. Remove from heat and allow the mixture to cool for five minutes, then stir in the vegetable oil.
  3. Add Eggs and Flavoring: Let the mixture sit for a couple more minutes, then whisk in the large egg, egg yolk, and vanilla extract until the batter is smooth and evenly combined.
  4. Incorporate Dry Ingredients: Add the baking powder, salt, and cornstarch to the batter and mix to combine. Gently fold in the all-purpose flour using a spatula until just combined to avoid overmixing. Set the batter aside while preparing the cream cheese layer.
  5. Add Mix-Ins: Fold the broken Oreo pieces and white chocolate chunks into the brownie batter carefully, so the chocolate chunks do not melt prematurely.
  6. Prepare Cream Cheese Layer: Using a handheld or stand mixer fitted with a paddle attachment, beat the softened cream cheese in a large bowl until it becomes light and smooth. Add the granulated sugar and continue mixing for 30 seconds. Scrape down the bowl sides to ensure even mixing.
