Dry Ingredients
- 1 and 1/2 cups Medjool dates, packed
- 1 cup almonds
- 1 cup walnuts
- 1/4 cup shredded coconut
- 1/4 cup cocoa powder
- 1/4 tsp salt
Wet Ingredients
- 2 tsp vanilla extract
- 1–2 tbsp maple syrup (only as needed)
Add-ins
- 1/3 cup candy coated chocolate chips
- Prepare the Base Mixture: Add Medjool dates, almonds, walnuts, shredded coconut, cocoa powder, vanilla extract, and salt to a food processor for blending.
- Blend to Form Dough: Process the mixture until it forms a sticky dough. If the dough is crumbly, add 1-2 tablespoons of maple syrup and blend again to enhance stickiness and sweetness.
- Combine with Chocolate Chips: Transfer the sticky brownie dough to a bowl and fold in the candy coated chocolate chips evenly.
- Shape the Bites: Using clean hands, scoop the dough and roll into bite-sized balls. They are now ready to enjoy immediately or store for later.
Notes
- Use soft, fresh Medjool dates for best results as they provide natural sweetness and moisture.
- If the dough is too sticky, chill it in the fridge for 10-15 minutes to make rolling easier.
- Maple syrup is optional—only add if the dough does not hold together well or if you prefer a sweeter bite.
- Store the bites in an airtight container in the refrigerator for up to one week.
- For a nut-free version, substitute nuts with pumpkin seeds or sunflower seeds.
