Ingredients

Scale

Cookie Dough

  • 1/2 cup smooth peanut butter
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/3 cup granulated sugar
  • 1 egg, at room temperature
  • 1/2 tsp vanilla extract
  • 1 & 1/3 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp corn starch
  • 1/4 tsp salt
  • 2/3 cup milk chocolate chips
  • 2 tsp oil (vegetable or canola)

Muddy Buddies Topping (Optional Homemade)

  • 1/4 cup (40g) semi-sweet chocolate chips
  • 1/4 cup (60g) peanut butter
  • 1 & 3/4 cups (100g) Chex cereal
  • 1/2 cup (50g) powdered sugar

Muddy Buddies Topping (Store-bought option)

  • Pre-made Muddy Buddies for topping cookies (optional)

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside to prevent the cookies from sticking.
  2. Cream Butter, Peanut Butter, and Sugars: In a large mixing bowl, cream together the softened butter, smooth peanut butter, brown sugar, and granulated sugar until the mixture is light and fluffy. This creates a smooth base for your cookie dough.
  3. Add Egg and Vanilla: Incorporate the egg and vanilla extract into the creamed mixture, mixing thoroughly until completely combined and smooth.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, corn starch, and salt. Gradually add this dry mixture into the wet ingredients, mixing just until no flour pockets remain. Avoid overmixing to keep cookies tender.
  5. Shape and Chill Dough: Using a large cookie scoop, portion out 9 equal-sized dough balls. Roll each between your palms to smooth, then gently flatten them to about 1/2 inch thick. Place the dough discs on a tray and freeze for 15 minutes to help maintain their shape during baking.
  6. Bake the Cookies: Arrange the chilled cookie dough discs on the prepared baking sheet with spacing. Bake in the preheated oven for 12-13 minutes until edges are lightly golden but centers remain soft.
  7. Melt Chocolate for Topping: While cookies are baking, melt the milk chocolate chips with 2 teaspoons of oil in the microwave using 30-second intervals. Stir between each interval until smooth and glossy.
  8. Top Cookies with Chocolate and Muddy Buddies: Immediately after removing the hot cookies from the oven, generously spread the melted chocolate over each cookie. Then, press 3 muddy buddies (either homemade or store-bought) onto the chocolate for a crunchy, sweet topping. Allow cookies to cool completely on the baking sheet before serving.
  9. Optional Homemade Muddy Buddies: To prepare the homemade muddy buddies, melt 1/4 cup semi-sweet chocolate chips with 1/4 cup peanut butter. Toss in 1 & 3/4 cups Chex cereal until well coated. Place the coated cereal in a zip-lock bag with 1/2 cup powdered sugar and shake until evenly coated. Spread on parchment paper and let set for 30 minutes before using to top the cookies.

Notes

  • Freezing the cookie dough discs before baking helps prevent spreading, ensuring thicker cookies.
  • Use room temperature egg for better mixing and consistency.
  • If you prefer, store-bought muddy buddies can be substituted to save time.
  • Make sure not to overmix the dough after adding flour to keep cookies tender.
  • Allow cookies to cool fully so toppings set properly and to avoid melting the muddy buddies.
  • For a more intense peanut butter flavor, use natural peanut butter.
