Lo Mein

  • 1 1/2 Tablespoons minced garlic
  • 2 medium boneless, skinless chicken breasts, cut into thin strips
  • 1 cup shredded carrots
  • 1 cup snow peas
  • 3 cups fresh spinach

Instructions

  1. Make the sauce: In a small bowl, whisk together the soy sauce, hoisin sauce, and sesame oil until well combined. Set the sauce aside so the flavors meld.
  2. Cook the noodles: Bring a large pot of water to a boil. Add the lo mein noodles and cook until al dente according to package instructions. Drain and set aside.
  3. Cook the chicken: Heat olive oil and sesame oil in a large nonstick sauté pan over medium heat. Once hot, add the minced garlic and chicken strips. Cook while stirring constantly until the chicken is cooked through and no longer pink inside. Remove the chicken from the pan and set aside.
  4. Cook the vegetables: In the same pan, add the shredded carrots and snow peas. Stir constantly and cook until the vegetables are tender but still crisp, about 3 minutes.
  5. Combine and finish: Add the fresh spinach, cooked noodles, cooked chicken, and the prepared sauce to the pan. Stir everything together and cook for about 2 minutes more, until the spinach has wilted and all ingredients are heated through and well coated with the sauce.
