  • 1012 Wooden Skewers, soaked in water for 15 minutes

Marinade & Sauce

  • 1/4 Cup Low Sodium Soy Sauce
  • 2.5 Tablespoons Honey
  • 1 Tablespoon Rice Vinegar
  • 0.5 Tablespoons Minced Garlic
  • 1 Teaspoon Ginger Juice (freshly grated and squeezed)
  • 2 Teaspoons Cooking Oil
  • 1 Teaspoon Cornstarch
  • 2 Tablespoons Water

Instructions

  1. Prepare the Sauce: In a bowl, combine the soy sauce, honey, rice vinegar, minced garlic, ginger juice, and 2 tsp cooking oil. Mix everything well to create your teriyaki sauce base.
  2. Marinate the Chicken and Veggies: In a large bowl, add the cubed chicken, onions, and peppers. Season with salt and pepper. Pour in two tablespoons of the prepared sauce and mix thoroughly to coat the ingredients. Cover with cling wrap and let it marinate for 30 minutes in the refrigerator.
  3. Assemble Skewers: Thread the marinated chicken pieces, onion cubes, and pepper cubes alternately onto the soaked wooden skewers, leaving a little space on both ends for handling.
  4. Prepare Glaze: Pour the remaining sauce into a pan and add the cornstarch mixed with water. Cook over low to medium heat, stirring frequently until the sauce thickens and reduces to a glossy glaze.
