Ingredients

Scale

Protein and Vegetables

  • 1 pound Ground Chicken (97/3 fat ratio)
  • 10 oz Shaved Brussels Sprouts (or halved Brussels sprouts)

Sauce

  • 1/3 cup (80g) Balsamic Vinegar
  • 3 Tablespoons (63g) Honey
  • 2 Tablespoons (30g) Whole Grain Mustard
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Kosher Salt

Cooking Oil

  • 1 Tablespoon (16g) Olive Oil

Instructions

  1. Prepare the Sauce: In a bowl, whisk together the balsamic vinegar, honey, whole grain mustard, black pepper, and kosher salt. Set this flavorful sauce aside for later use.
  2. Sauté the Brussels Sprouts: Heat a large skillet over medium-high heat and add the olive oil. Add the shaved Brussels sprouts and sauté for 4-5 minutes until tender and slightly caramelized. If using halved Brussels sprouts, cook a few minutes longer to ensure they are cooked through. Once done, transfer them to a separate bowl.
  3. Cook the Ground Chicken: In the same skillet, add the ground chicken. Let it brown undisturbed on one side until golden brown, then break it apart with a spatula and cook until fully cooked through.
  4. Add the Sauce and Thicken: Pour the prepared sauce over the cooked chicken. Stir thoroughly to combine and cook for about 1-2 minutes, allowing the sauce to thicken and coat the chicken evenly.
  5. Combine and Season: Turn off the heat and add the sautéed Brussels sprouts back into the skillet. Mix everything gently to combine. Adjust seasoning with additional salt and pepper if desired.
  6. Serve: Serve the ground chicken and Brussels sprouts mixture over cooked rice, cauliflower rice, or a blend of both for a satisfying meal.

Notes

  • Shaved Brussels sprouts cook faster than halved; adjust cooking time accordingly.
  • Be sure to brown the ground chicken well on one side for maximum flavor before breaking it up.
  • Honey adds sweetness balancing the tangy balsamic vinegar and mustard.
  • Serve with cauliflower rice for a lower-carb option.
  • Leftovers can be stored in the refrigerator for up to 3 days.
