Ingredients

Scale

Peanut Butter Mixture

  • 1/2 cup creamy, unsweetened peanut butter
  • 1 Tbsp honey
  • 1/2 cup + 1 Tbsp almond flour

Pretzel Assembly

  • Approx. 48 pretzel twists (plain or salted)

Chocolate Coating

  • 1/2 cup dark chocolate chips

Instructions

  1. Prepare Baking Sheet: Line a medium-sized baking sheet with parchment paper to prevent sticking and facilitate easy clean-up.
  2. Mix Peanut Butter and Honey: In a large mixing bowl, combine the peanut butter and honey. Stir until the mixture is smooth and fully blended.
  3. Add Almond Flour: Gradually add the almond flour to the peanut butter mixture. Stir well until the mixture attains a cookie dough-like consistency. If too runny, add more almond flour; if too crumbly, add a little more peanut butter to reach the right texture.
  4. Assemble Pretzel Bites: Scoop about 1 teaspoon sized portions of the peanut butter mixture and place each on one pretzel twist. Top with a second pretzel to make a sandwich. Remove any excess mixture around the edges and return it to the bowl to avoid mess. Place each completed sandwich onto the parchment-lined baking sheet.
  5. Melt Chocolate: Place the dark chocolate chips in a small bowl or ramekin and microwave in 30-second intervals, stirring between each, until smooth and melted. This should take about 2 minutes total.
  6. Dip Pretzel Bites: Dip one half of each peanut butter pretzel sandwich into the melted chocolate, then return it to the baking sheet. Repeat this process for all sandwiches.
  7. Chill to Set: Place the baking sheet in the refrigerator and allow the chocolate to cool and harden completely, about 1 hour, before serving or storing.

Notes

  • Servings: Makes approximately 24 pretzel bites, depending on pretzel size and peanut butter portioning. A typical serving is 2-3 bites.
  • Storage: Store in an airtight container in the refrigerator for up to 2 weeks. To prevent sticking, place parchment paper between layers.
  • Recipe Modifications: Peanut butter can be swapped with almond butter. Omit chocolate coating if preferred. To make gluten-free, use certified gluten-free pretzels, peanut butter, and chocolate chips. For a vegan option, substitute honey with maple syrup and use vegan chocolate chips.
