Keto Lasagna Sheets

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350°F (180°C). Line a large baking sheet with parchment paper and set it aside to prepare for baking the keto lasagna sheets.
  2. Make Keto Lasagna Sheets: In a microwave-safe bowl, combine cream cheese, mozzarella, and parmesan cheese. Microwave in 30-second intervals, stirring in between, until the cheeses are mostly melted and combined. Add the eggs and whisk thoroughly until you have a smooth batter.
  3. Bake Lasagna Sheets: Pour the cheese and egg batter onto the lined baking sheet and spread evenly. Bake for 15 minutes until the edges are set and firm. Remove from oven and allow the sheet to cool completely.
  4. Cook Meat Sauce: Heat a non-stick pan over medium heat with a splash of oil. Add chopped onions and minced garlic, sautéing for about 5 minutes until softened and fragrant. Add the ground beef, stirring and cooking for 3 minutes until browned. Pour in the marinara sauce and cook together for another 5 minutes. Remove from heat.
  5. Assemble Lasagna: Line an 8 x 8-inch baking pan completely with tin foil. Cut the cooled keto lasagna sheets into 6 equal pieces. Begin layering by placing two sheets on the bottom of the pan, spread 1/2 cup ricotta cheese over the sheets, add a third of the meat sauce, and sprinkle 1/2 cup shredded mozzarella. Repeat the layers until all ingredients are used, finishing with mozzarella on top.
  6. Bake Assembled Lasagna: Place the pan in the preheated oven and bake for 30 to 35 minutes, or until the top turns golden brown and the sauce is bubbly. Once done, let the lasagna cool for 5 minutes before serving to allow it to set.
