Ingredients

Scale

Wet Ingredients

  • 1 cup plain yogurt
  • ½ cup milk
  • ½ cup mild flavored oil or melted butter
  • 3 large eggs
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour
  • ½ cup light brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup rainbow sprinkles

Instructions

  1. Preheat oven: Preheat your oven to 400°F (200°C), and prepare a mini muffin tin by spraying it with nonstick spray or lining it with mini paper liners to prevent sticking.
  2. Mix wet ingredients: In a large mixing bowl, combine the plain yogurt, milk, mild flavored oil or melted butter, eggs, and vanilla extract. Stir gently until everything is just blended to ensure a light texture.
  3. Add dry ingredients: Gradually add the all-purpose flour, light brown sugar, baking soda, and salt into the wet mixture. Stir gently to incorporate all ingredients, being careful not to overmix to keep muffins tender.
  4. Fold in sprinkles: Carefully fold in the rainbow sprinkles to avoid color bleeding and maintain the bright funfetti appearance in the batter.
  5. Fill muffin cups: Using a small cookie scoop or spoon, fill each mini muffin cup about ¾ full with the batter for even baking and perfect muffin size.
  6. Bake: Place the muffin tin in the preheated oven and bake for 9 to 11 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Cool: Allow the muffins to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely, ensuring the best texture and taste.

Notes

  • Do not overmix the batter to avoid tough muffins; a few lumps are okay.
  • For a dairy-free version, substitute yogurt and milk with suitable plant-based alternatives.
  • Store muffins in an airtight container at room temperature for up to 3 days or freeze for longer storage.
  • If you want larger muffins, increase baking time by 3–5 minutes and adjust batter portions accordingly.
