Ingredients

Scale

Crust Ingredients

  • 2 cups almond flour
  • 2 tsp cinnamon
  • 1/3 cup powdered sugar substitute
  • 6 tbsp butter, melted
  • Dash of salt

Caramel Pecan Layer Ingredients

  • 3/4 cup unsweetened almond milk
  • 1/2 cup sugar substitute
  • 1 tbsp butter
  • 1 tsp vanilla extract
  • 1 tsp molasses (sugar-free maple syrup)
  • 1 tsp sugar-free maple syrup
  • 1/2 tsp cinnamon
  • 1 1/2 tsp xanthan gum
  • 1 1/2 cups pecan halves

Instructions

  1. Prepare the crust: In a mixing bowl, combine the almond flour, cinnamon, powdered sugar substitute, and a dash of salt. Stir in the melted butter until the mixture is well combined and crumbly.
  2. Form the crust: Pour the crust mixture into a parchment paper-lined pan. Press it down firmly and evenly to create a solid base. Set aside while preparing the filling.
  3. Make the caramel layer: In a pot over medium heat, combine the unsweetened almond milk, sugar substitute, butter, vanilla extract, molasses (sugar-free maple syrup), sugar-free maple syrup, and cinnamon. Stir occasionally as the mixture heats and ingredients melt together.
  4. Thicken the caramel: Stir in the xanthan gum and bring the mixture to a gentle boil. Reduce heat and simmer, stirring frequently, until the mixture thickens to a sauce-like consistency. Remove from heat.
  5. Assemble the bars: Pour the thickened caramel mixture evenly over the prepared crust. Immediately top with the pecan halves, pressing them gently into the caramel layer.
  6. Set the bars: Place the pan in the freezer for about 3 hours to allow the bars to firm up properly.
  7. Serve and store: Once set, remove the bars from the freezer and slice into servings. Store the bars in an airtight container in the freezer or refrigerator until ready to serve.

Notes

  • Use a sugar substitute suitable for baking to keep it keto-friendly.
  • The xanthan gum helps thicken the caramel without adding carbs.
  • Make sure the pan is well lined with parchment paper for easy removal.
  • Store bars in the freezer for best texture and freshness.
  • Let bars sit at room temperature for a few minutes before serving if too firm from freezing.
