Ingredients

Scale

Salad

  • 4 ripe peaches, pitted and sliced
  • 6 cups fresh arugula
  • 1/2 cup crumbled goat cheese or feta cheese
  • 1/4 cup toasted pecans or walnuts
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh basil leaves, torn (optional)

Dressing

  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Prepare the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined. Taste and adjust seasoning if necessary.
  2. Prepare the Salad: In a large bowl, combine the arugula, sliced peaches, crumbled goat cheese (or feta), toasted pecans (or walnuts), and red onion. If using basil, add it in now as well.
  3. Toss the Salad: Drizzle the dressing over the salad ingredients. Gently toss to coat everything evenly in the dressing.
  4. Serve: Transfer the salad to a serving platter or individual plates. Serve immediately and enjoy!

Notes

  • For added crunch, toast the nuts in a dry skillet over medium heat until fragrant, about 3-4 minutes.
  • Peaches can be substituted with nectarines or mangoes for a different flavor profile.
  • Use feta cheese if you prefer a tangier taste instead of goat cheese.
  • Make sure to serve the salad immediately after dressing to keep the arugula fresh and crisp.
  • If basil is not available, fresh mint leaves can be a nice alternative.
