Salad
- 4 ripe peaches, pitted and sliced
- 6 cups fresh arugula
- 1/2 cup crumbled goat cheese or feta cheese
- 1/4 cup toasted pecans or walnuts
- 1/4 red onion, thinly sliced
- 1/4 cup fresh basil leaves, torn (optional)
Dressing
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Prepare the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined. Taste and adjust seasoning if necessary.
- Prepare the Salad: In a large bowl, combine the arugula, sliced peaches, crumbled goat cheese (or feta), toasted pecans (or walnuts), and red onion. If using basil, add it in now as well.
- Toss the Salad: Drizzle the dressing over the salad ingredients. Gently toss to coat everything evenly in the dressing.
- Serve: Transfer the salad to a serving platter or individual plates. Serve immediately and enjoy!
Notes
- For added crunch, toast the nuts in a dry skillet over medium heat until fragrant, about 3-4 minutes.
- Peaches can be substituted with nectarines or mangoes for a different flavor profile.
- Use feta cheese if you prefer a tangier taste instead of goat cheese.
- Make sure to serve the salad immediately after dressing to keep the arugula fresh and crisp.
- If basil is not available, fresh mint leaves can be a nice alternative.
