Noodles and Sauce

  • 8 oz. rice noodles

Instructions

  1. Soak the Noodles: Place the rice noodles in a shallow dish filled with water and soak according to the package instructions until tender but still firm. Set aside until ready to use.
  2. Prepare the Sauce: In a small bowl, whisk together 1/4 cup low-sodium soy sauce, tamari sauce, low-sodium chicken broth, rice vinegar, grated ginger, 2 cloves minced garlic, and red pepper flakes if using. Set the sauce mixture aside.
  3. Cook the Ground Beef: Heat vegetable oil in a large wok or skillet over medium-high heat. Add the ground beef and cook, stirring frequently, until browned and cooked through.
  4. Season the Beef: Stir in 2 tablespoons soy sauce into the cooked beef and season generously with kosher salt and freshly ground pepper to taste.
