Chicken and Seasoning

  • 1 tsp onion powder
  • 1/2 tsp salt

Garlic Parmesan Butter Sauce

  • 1 stick butter (8 tbsp)
  • 810 cloves garlic, minced
  • 1/2 cup parmesan, grated
  • 1 tbsp hot sauce (more if desired)
  • 2 tsp red pepper flakes
  • 1/3 cup fresh parsley, minced
  • 1 tbsp dry ranch seasoning
  • 1 tsp dried dill
  • 1/2 tsp onion powder

Instructions

  1. Soak Skewers: Soak wooden skewers in water for at least 30 minutes to prevent burning during cooking.
  2. Prepare Chicken and Seasoning: In a small bowl, combine chicken seasoning ingredients: 1.5 tbsp dry ranch seasoning, dried dill, paprika, garlic powder, onion powder, salt, and pepper. Cut chicken into 3-inch pieces. Place chicken in a large bowl or zip-top bag, add olive oil and seasoning mixture, and toss well to coat all pieces evenly.
  3. Skewer the Chicken: Thread the seasoned chicken pieces tightly onto the soaked skewers, leaving no gaps to ensure juiciness. Trim the skewers if necessary to fit into the air fryer basket.
  4. Make Garlic Parmesan Butter Sauce: In a microwave-safe bowl, melt the butter with minced garlic until partially melted. Add red pepper flakes, hot sauce, 1 tbsp dry ranch seasoning, dried dill, onion powder, and grated parmesan. Whisk all ingredients together until well combined. If the sauce separates, add 1-2 tbsp softened butter and stir to re-emulsify.
  5. Baste Par-Cooked Chicken: Reserve about one-third of the sauce for later. Use the rest to baste the chicken skewers after the first cook.
  6. Cook Chicken in Air Fryer: Place 2-3 skewers in the air fryer basket. Cook at 400°F for 5 minutes. Remove, flip the skewers, baste with sauce, and cook for an additional 2 minutes at 400°F.
  7. Finish Cooking: Flip the skewers back again, baste with more sauce, and cook for a final 5-6 minutes, or until the internal temperature of the chicken reaches 165°F. Total cooking time is approximately 12-14 minutes but may vary depending on your air fryer model.
  8. Serve: After cooking, brush the chicken with the remaining reserved garlic parmesan sauce to avoid cross contamination. Sprinkle with extra parmesan and chopped fresh parsley if desired, then serve immediately.
